Ingredients:
· 2 15-oz cans chickpeas, drained and rinsed
· ½ cup lemon juice, freshly squeezed
· Zest of one lemon
· ¼ cup tahini
· Zest of one lemon
· 2 tbsp olive oil
· 1 clove garlic
· ⅓ cup water
· 1 tsp salt
Instructions:
1. To a food processor or blender, add chickpeas, lemon juice, lemon zest, tahini, olive oil, garlic, and salt. Blend until smooth.
2. Once the mixture is smooth, start adding about a tablespoon of water at a time to the mixture, blending in between additions until you reach your desired consistency. For a thicker consistency, you will want to add less water. For a thinner consistency, you will want to add more water.
3. Transfer the mixture to a bowl, drizzle with olive oil, and garnish with lemon zest. Serve with John Wm. Macy’s Garlic Romano Cheesesticks.
