Yield: 4-6 servings 


· 4 medium zucchini, cut into fries
· 3 large eggs
· 1 tsp. Salt, divided
· 1-½ cups panko bread crumbs
· 2 cups crushed Melting Parmesan Cheesesticks
· Olive oil, for frying
· ¼ cup freshly grated Parmesan cheese, optional


1. In a medium bowl, stir panko, Melting Parmesan cheesesticks and ¾ teaspoon salt to blend.
2. Pour oil into a large frying pan, about two inches deep. Heat over medium heat until a deep-fry thermometer reads 350°F.
3. In another medium bowl, whisk eggs together until blended.
4. Dip the zucchini in the eggs to coat, letting excess drip back into the bowl.* Coat the zucchini sticks in the panko mixture until completely covered and place on a baking sheet.
5. Once the oil is hot, fry the zucchini sticks for 3 minutes or until golden brown. Use a slotted spoon to transfer the fried zucchini to paper towels to drain.
6. Sprinkle the zucchini sticks with remaining salt. Serve immediately topped with Parmesan cheese.

*Work in batches so that the zucchini breading does not get soggy before frying.
