Ingredients:
· 1 (8-oz) wheel of Brie
· 1 medium yellow onion, diced
· 1 tbs olive oil
· 2 tbs balsamic vinegar
· ½ cup dried cranberries
· 1 tbs fresh rosemary, chopped
· 1 tbs brown sugar· Salt and pepper, to taste
Instructions:
1. Preheat the oven to 350°F.
2. Heat the olive oil in a small skillet over medium heat. Add the onions and a pinch of salt. Stir frequently until the onions reach a light golden brown color.
3. Add the balsamic vinegar, dried cranberries, rosemary, brown sugar, and a pinch of pepper to your skillet. Cook for an additional 5 minutes, stirring occasionally. Remove from heat.
4. Place your brie in a small baking dish. Spoon the onion and cranberry mixture evenly over the top of the Brie. Bake for 8-10 minutes or until the cheese begins to melt and is gooey to the touch. Remove from the oven and let sit for 5 minutes before serving.
5. Serve warm with John Wm. Macy’s Grilled Crostini Toasts.
