Long before John Wm. Macy's CheeseSticks' wholesale bakery or online "snack store" existed, John Macy created a "snack factory" in his kitchen! John has been at home in the kitchen for most of his life. During his college years, he catered clambakes for summer residents on Martha’s Vineyard and later briefly apprenticed to his uncle, a cordon bleu trained chef and caterer.
In the mid 1970s, just out of college, John started Easy Cook Eaty, a small catering business in Northern California. Never one to choose ready-made appetizers, John developed a spicy, twisted breadstick made by laminating multiple layers of sharp cheddar cheese and fresh sourdough, hand-twisting strips of the layered dough and baking them twice to a satisfying crunch. John's "CheeseSticks" appetizers were an instant hit.
John believed there was a bigger market for his unique gourmet appetizers, and after a short decade of hard work and a few unexpected detours, he became an "overnight" success. Here’s the chronology:
1975 - 1976 - John starts Easy Cook Eaty and creates the original CheeseSticks recipe.
1977 - John sells CheeseSticks at county fairs and carnivals along the California coast.
1979 - John moves to New York City.
1982 - John installs a small commercial oven and dough sheeter in his walk-up East Village apartment and the first CheeseSticks "snack factory" takes shape.
1985 - John Wm. Macy's CheeseSticks' snack business is launched from a small leased storefront on New York's Lower East Side.
Not long after the business launched, Balducci’s, then a landmark New York specialty grocer, placed its first order and John Wm. Macy's CheeseSticks soon became one of their featured specialty snacks. Other high-profile New York institutions including Dean & Deluca, Fairway, Zabars and the Grand Hyatt and Marriott Hotels would follow, and the business was on its way!
Fast forward many years and a move across the Hudson River later, and you will find John Wm. Macy’s CheeseSticks’ sixty employees are still hard at work today producing "the perfect crunch" in our 50,000 square foot snack factory in Northern New Jersey.
Though the venue has changed and our bakery is larger and a bit more sophisticated these days, the heart of our CheeseSticks, CheeseCrisps and SweetSticks still comes from the kitchen. John's inspiration, the quality of our ingredients and the skill of our employees come together in our unique bakery to make a delicious difference.
