If you're looking for something different and unique for dinner, create a five-course meal with a few changes to your favorite recipes. The five courses would be a salad, appetizer, main meal with a side and dessert. And, all of them use John Wm. Macy's CheeseSticks, CheeseCrisps or SweetSticks.
Mix iceberg and romaine lettuce together for the base of the salad. Add sliced mushrooms, sliced radishes, julienne carrots, chopped celery and julienne green and sweet red peppers. Also, add shredded cheddar cheese, diced ham, green olives and black olives. Top the salad with your favorite dressing. Garnish with John Wm. Macy's Chipotle and Cheddar CheeseCrisps instead of croutons.
Clean fresh button mushrooms and dry them completely. In a small bowl, beat 1 egg and 2 tablespoons water until the eggs just start to turn frothy. In a zippered baggie, mix ¼ cup flour, ½ teaspoon pepper and ½ teaspoon salt. In a second zippered baggie, finely crush John Wm. Macy's Melting Parmesan CheeseSticks.
Dip the mushrooms in the egg mixture, then shake them in the flour mixture. Dip them in the egg mixture again, and then in the CheeseStick mixture. Deep fry at 350 degrees Fahrenheit until they are golden brown. Drain grease from the mushrooms on a paper towel and serve. If you're making several batches, keep finished batches warm in a 250-degree oven.

Scalloped Potatoes and Ham
- 2 tablespoons butter
- 2 tablespoons flour
- 1 ½ cups milk
- Salt and pepper to taste
- 1 tablespoon butter
- 2 medium onions, thinly sliced
- 4 large baking potatoes, thinly sliced (peel or not, as to your preference)
- 12 ounces sliced baked ham, sliced ¼ inch thick
- 2 cups grated cheddar cheese
- 1 cup crushed John Wm. Macy's Cheddar & Scallion CheeseSticks
Preheat the oven to 350 degrees Fahrenheit. Butter a casserole / baking dish. Melt the butter over medium high heat. Stir in the flour and cook the mixture for minute. Remove the saucepan from the heat. Whisk in the milk. Return the pan to the heat and bring the mixture to a simmer, stirring constantly. Once the sauce thickens, remove it from the heat and season it with salt and pepper. Set the sauce aside.
In a skillet, cook the onions in bacon fat or lard until they are golden brown. You could also use butter, but butter may burn if you're not careful. Season the onions with salt and pepper.
Spread 1/3 of the sauce in the bottom of the baking dish. Top with one-half of the potatoes. Layer half of the onions, ham and cheese, plus another third of the sauce. Continue layering until all ingredients are layered in the casserole dish, ending with a layer of cheese. Spread the crushed CheeseSticks over the scalloped potatoes. Bake uncovered for 45 minutes until golden and bubbly. You may want to put a baking sheet under the casserole dish, or a piece of foil on the bottom of the oven as this may bubble over if the casserole dish is super full.
Dutch Chocolate Raspberry Parfait
- ¾ cup John Wm. Macy's Dutch Chocolate SweetSticks, coarsely crushed
- 5 ounces bittersweet chocolate, coarsely chopped
- 1 ½ cups chilled whipping cream, divided
- 1 teaspoon vanilla flavoring
- 4 tablespoons honey, divided
- 1 pint fresh raspberries
- 2 tablespoons cognac
- Mint springs and 4 additional SweetSticks for dipping
Heat ½ cup of cream in a heavy saucepan until it's hot, but not boiling. Gradually add the chocolate to the cream. Let it start to melt and then whisk the mixture until the chocolate is completely melted and smooth. Cool the mixture to room temperature.
Beat the remaining cream to stiff peaks with a hand or bowl mixture. Add the vanilla, cognac and 3 tablespoons of honey. Fold half of the whipped cream into the chocolate mixture. Crush one-half of the berries in a small bowl. Add the remaining whipped cream and mix until the mixture turns pink.
Divide the chocolate mousse mixture evenly into four decorative glasses. Spring each with 2 tablespoons of the SweetSticks crumbs. Add a layer of raspberries, sprinkled lightly with sugar. Top with the raspberry whipped cream. Chill for at least an hour. At serving time, sprinkle each parfait with SweetSticks crumbs. Garnish with mint and fresh raspberries. Serve with a spoon and two SweetSticks for dipping.
