5 Healthy Weekday Food Recipes Before Thanksgiving

Brown-bagging it may not have been cool when you were a kid, but things change. Today, enjoying a homemade lunch at the office is a rare luxury. Instead of fighting the lunchtime crowds, why not have a healthy, delicious homemade meal at work?

These five healthy recipes are easy to make. They are the perfect meals to take to the office or enjoy as a quick weekday dinner.

1. Tomato-Basil Soup


Upgrade a childhood classic with this healthy Tomato-Basil Soup recipe.


  • 1 TB butter
  • 1/2 cup onions, finely diced
  • 16 oz canned diced tomatoes, drained
  • 2 TB fresh basil, finely chopped
  • 12 oz canned chicken stock
  • salt, to taste
  • black pepper, to taste

  1. Melt butter in a pot over medium heat.
  2. Cook onions until translucent.
  3. Add diced tomatoes. Cook until tomatoes are softened.
  4. Add chicken stock. Bring to a boil. Reduce to a simmer. Add basil.
  5. Cook for 5 minutes.
  6. Roughly puree with a stick blender.
  7. Taste. Season with salt and pepper.
  8. Garnish with CheeseCrisps.


2. Chicken Caesar Salad

Quick and delicious, a Chicken Caesar Salad satisfies even the heartiest appetite.



  • 1 chicken breast
  • salt, to taste
  • black pepper, to taste




  1. Season the chicken breast with salt and black pepper.
  2. Heat oil in a heavy pan over medium heat.
  3. Cook chicken until golden brown, about 5 minutes per side.
  4. Cool chicken. Cut into cubes.
  5. Pack chopped romaine, chicken, dressing, CheeseCrisps, and parmesan cheese separately. Combine immediately before eating.


3. Apricot Almond Meatballs


An alternative to classic Italian meatballs. These sweet and savory meatballs are great over rice, mashed potatoes, or as a sandwich.



  • 3/4 cup John Wm. Macy's Original Cheddar CheeseSticks, crushed
  • 1 pound lean ground chuck
  • 1 medium onion, finely grated
  • 1 clove garlic, finely grated
  • 1 tablespoon steak sauce
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ancho chili powder
  • 1/3 cup toasted almonds, minced
  • 1 egg, lightly beaten
  • 2 tablespoons olive oil


  • 3 tablespoons flour
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1/2 cup apricot chutney, drained and minced
  • 2 tablespoons tomato paste
  • 2 tablespoons dry red wine
  • Salt and pepper to taste



  1. Place all meatball ingredients, except for the oil, in a bowl. Gently mix to combine. Avoid over mixing to prevent the meatballs from becoming too dense.
  2. Form 1" meatballs.
  3. Heat oil in a heavy pan. Cook meatballs on all sides for 5 - 7 until browned.
  4. Remove meatballs from the pan. Pat dry with a paper towel.
  5. Wipe out the pan, and return it to the heat.
  6. Make a roux with the flour and oil. Cook until golden.
  7. Add remaining sauce ingredients to the pan. Cook until slightly thickened.
  8. Return the meatballs to the pan. Cover and simmer on low for 10 - 15 minutes.


4. Pasta Salad with Chickpeas and Sun Dried Tomatoes

Make this easy pasta salad the night before. Flavors will combine overnight in the refrigerator.



  • 1 pound penne pasta
  • 2 cups sun-dried tomatoes in olive oil, roughly chopped
  • 3 TB olive oil from the sun-dried tomatoes, cut into strips
  • 1 cup canned chickpeas, drained
  • 1 cup Kalamata olives, halved
  • 1/2 cup basil, chopped
  • black pepper, to taste



  1. Cook pasta as directed on the package.
  2. In a large bowl, combine remaining ingredients.
  3. Drain pasta well. Add to other ingredients. Toss to coat.
  4. Cover and place in the refrigerator.
  5. Serve with your choice of John Wm. Macy's CheeseSticks.


5. Melting Florentine Quiche



 Forget what you have heard about real men not eating quiche. Everyone will ask you for this recipe.



  • 1 box John Wm. Macy's Melting Romano CheeseCrisps, crushed
  • 4 eggs, beaten
  • 1 cup milk
  • 2 cups small curd cottage cheese
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups chopped fresh spinach
  • 2 tablespoons chopped fresh basil leaves
  • 1/4 cup minced red onion
  • 1/4 teaspoon minced garlic
  • 1/2 cup diced Kalamata olives



  1. Preheat oven to 400 degrees.
  2. Grease a 9 and 1/2" quiche pan.
  3. Cover the bottom of quiche pan with crushed CheeseCrisps.
  4. In a large bowl, mix eggs, milk, cheeses, salt and pepper until well combined.
  5. Gently stir in remaining quiche ingredients.
  6. Slowly pour mixture into quiche pan.
  7. Bake until set, 45 - 50 minutes.
  8. Cool before slicing.
