If you’re anything like me, cheese is an integral part of your life. I like to find a way to work cheese into every meal of the day, and dessert is no exception. If you’re a cheese lover, you need these five easy, cheesy desserts in your life.
Raspberry Cheese Danish
A pastry dish sounds like a lot of work, but the key to simplifying this delicious cheesy dessert is to use handy tubes of crescent roll dough. All you have to “make” is the filling. This dessert would also make a delicious morning treat. Here’s what you’ll need:
- 16 oz. cream cheese
- 1.5 tsp vanilla
- 1 egg, beaten
- ½ cup sugar
- ½ cup raspberry jam
- 2 pkg. refrigerated crescent roll dough
- 4 oz. sliced almonds
Heat the oven to 350° F and mix the cream cheese, vanilla, and sugar together. Unroll one of the packages of dough and spread the cream cheese mixture on top. Spread the jam on top of the cream cheese mixture leaving about ¼ inch around the edges. Cover with the second unrolled package of dough and seal the edges with a fork. Brush with the beaten egg, sprinkle with sliced almonds, and bake for 30 minutes.
One Bowl Mascarpone Brownies
Anything made in one bowl has my vote. Baking is fun, but the cleanup is not so much fun. These mascarpone brownies sound complicated, but they only take about 20 minutes to make. You can’t beat that! For the brownies you’ll need:
- 1 cup butter
- 3 ounces finely chopped bittersweet chocolate
- 1 cup white sugar
- ½ cup cocoa powder
- ½ cup mascarpone cheese
- 3 large room temperature eggs
- 2 tsp vanilla extract
- ½ cup all-purpose flour
- ½ tsp salt
For the ganache you’ll need:
- 6 ounces finely chopped semi-sweet chocolate
- 6 tablespoons whipping cream
- 3 tablespoons unsalted butter
Roasted Fruit and Cheese Plate
Perhaps the easiest way to have cheese for dessert is just to serve it on a platter with some roasted fruit. Bleu cheese makes this a recipe for true cheese lovers, and the presentation with the crumbled cheese, beautiful figs, and toasted hazelnuts will make this look like a five-star dessert that actually only requires a few steps.
- ⅓ cup hazelnuts
- 2 Bosc pears, halved lengthwise, cored, and cut into ¾ inch strips
- 1 large quince, peeled, cored, and diced
- ¼ cup sugar
- 4 tablespoons unsalted butter, melted
- 1 tablespoon lemon juice
- 8 figs, halved lengthwise
- 4 ounces bleu cheese, crumbled
Heat the oven to 425° F and spread the hazelnuts in a pie pan. Toast them for seven to ten minutes, or until they are golden. Put them on a kitchen towel and rub off the skins, then coarsely chop. Toss the pears and quince with sugar, butter, lemon juice, and a healthy pinch of salt.
Spread the fruit in an even layer and roast for 20 to 25 minutes. Add the figs in the last five minutes. Put the fruit on a platter and top with the hazelnuts and cheese.
A cheese lover dessert list just wouldn’t be complete without a cheesecake recipe. While you can use a premade graham cracker crust to simplify things even more, consider making a homemade crust using graham crackers and Java Cinnamon SweetSticks for a really delicious and interesting flavor. Whatever direction you decide to go with the crust, here is what you’ll need for a delicious sour cream cheesecake:
- 16 ounces cream cheese
- 1 cup white sugar
- 1 cup sour cream
- 2 tsp. vanilla extract
- 2 eggs
Heat your oven to 325° F. Cream together the cream cheese and sugar. Add the eggs one at a time and blend well. Then, add the vanilla and sour cream. Once everything is well-blended, pour the mixture into your crust. Bake the cheesecake for 60 to 70 minutes, then let it chill completely in the refrigerator.
Cream Cheese Dessert Dip
If you have five free minutes, you can whip up this deliciously easy cream cheese dip. With only two ingredients, we saved the easiest recipe for last.
