Leapin' leprechauns! You may have heard the saying that everyone is Irish on St. Patrick's Day because so many people love to get in on the action of this fun-filled holiday. There are parades, beer festivals, and parties. If you're planning to throw a party, or to attend one, preparing some delicious St. Patty's inspired party finger foods will get you in the spirit.
Get your Irish on
You may not have any happy little fellows dressed in green to assist you, or even a pot of gold to inspire you, but all you need is to think Irish, and think green. What's the first thing that comes to mind when you think of Irish food? Corned Beef and cabbage is perhaps the most well-known Gaelic fare.
But honestly, who wants to serve a big pot of that at a party? How about the easy party-finger food version? These tasty Hot Pastrami Sliders from the crock pot sound perfect for a taste of the Irish with a slight twist from food.com
- 16 oz thinly sliced lean deli pastrami
- 12 oz Smithwick's Irish ale (pronounced "Smitticks if you want to be Irish!) or use another dark ale
- 10 ½ oz beef consomme
- 1 small onion, slivered
- 1 tsp ground mustard
- 4 oz thinly sliced baby Swiss cheese
- 8 small dinner rolls or rye rolls
- coarse ground mustard, as needed
- 1 deli barrel-style pickle, thinly sliced
- Whisk together the ale, consomme, and mustard in a regular crock pot. Add slivered onion and cooked deli pastrami.
- Cover and cook on high for 3 hours
- Drain pastrami and reserve cooking liquid
- Put pastrami on rolls with Swiss cheese, mustard, and pickle slices
- Place in toaster oven or moderate oven to crisp the rolls and melt the cheese
- Serve along with cooking liquid as an au jus if desired.
